A chocolate fountain is the perfect dessert for weddings, parties or any other special occasion. It is a moveable feast where chocolate continuously flows from the top to bottom of a steel, tiered fountain. Guests dip pieces of fruit and candy into the chocolate fondue as it pours down tiers into a small chocolate reservoir below.
Chocolate fountains can be either rented or purchased.
They are available in three sizes: small, medium and large. They range in height from 19 to 52 inches. A small chocolate fountain can hold at least 6 pounds of chocolate while a large may hold as much as 40 pounds. The price range varies between $100 to $4,000, depending on the brand and make of the chocolate fountain model.
Chocolate fountains generally are made from commercial stainless steal. Under proper care, they may last as long as 10 years. The fountain consists of a base or reservoir and three descending levels or tiers. The actual chocolate is stored in the reservoir and flows from the top of the fountain down over the three tiers and back into the reservoir where the cycle is repeated.
A chocolate fountain operates in a specific way. Once turned on, a double boiler heats the fountain internally and keeps the chocolate warm. Then, a one piece rotating screw called an auger lifts the warmed chocolate to the top of the fountain.
Chocolate fountains will only operate with a specific kind of chocolate. Any brand of chocolate may be used as long as it contains between 32 to 39 percent cocoa butter. The extra cocoa butter gives the chocolate a creamy texture which allows it to flow more easily through the fountain. Any other type of chocolate will clog up the fountain which will cause a disruption in flow and make it more difficult to clean.
Almost any kind of food can be used to dip into the chocolate fountain. However, it is best to use foods that combine well with chocolate. Popular choices include strawberries, pineapples, cherries, grapes, marshmallows, pretzels, caramel squares, small pieces of cake and biscotti. Also, use foods that do not crumble easily; crumbly foods will break off into the chocolate and cause it to become lumpy, disrupting the flow of the chocolate.
Chocolate fountains are a fun elegant way to present desserts at parties and special occasions. Most are provided by catering companies or banquet halls. Otherwise, they also can be purchased online. Miniature chocolate fountains can be bought at many departments stores.
