Chocolate has been a popular ingredient since the Mayans first used it to make hot drinks in 250 A.D. Today, chocolate is used in many different recipes ranging from desserts, candies, side dishes and main courses. It functions as a main ingredient, a flavor additive, a seasoning and an attractive garnish.

Chocolate recipes are not restricted to one type of chocolate. It is important to follow all chocolate recipes exactly since the type of chocolate used affects both taste and texture. Types of chocolates include sweet, semi-sweet, bittersweet, cocoa powder, cocoa butter, milk chocolate, dark chocolate and white chocolate.

Cooking with chocolate can be difficult when called for in chocolate recipes. It has to be stored at the right temperature so the cocoa butter does not separate from the chocolate. Storing chocolate in the refrigerator is not recommended. Chocolate also has to be heated at the right temperature. Heating it too high will result in scorching. Experts recommend chocolate be heated using a microwave oven or a double broiler.

Many popular chocolate recipes originate from around the globe. Two chocolate recipes – hot chocolate and mole – originate from Latin America.

Hot chocolate original derived from Mexico and is actually made differently there than in the United States. Mexican hot chocolate is made by grinding cocoa beans by hand. The cocoa grounds are then combined with water, sugar and cinnamon. The mixture is heated and whipped with a large swizzle stick until a large frothy foam forms at the top.

Mole Poblano de Pollo is a popular main course chocolate recipe from Mexico. Mole is sauce made from chocolate. Traditionally, mole is home made using a total of 25 different ingredients and takes several hours to prepare. However, many grocery stores sell a prepared mole sauce in jars. This sauce is traditional prepared with chicken and rice. It is bittersweet and a little spicy.

There are a variety of chocolate recipes to choose from. Most can be found on the Internet, in cookbooks or on professional cooking shows. Chocolate recipes are not just limited to desserts and chocolate can be used as a glaze on meats, vegetables or fruits. Chocolate recipes can be sweet or bitter depending on the dish that is being made.

The important thing is to experiment and have a willingness to try something new.
